This is a homemade mango pizza bacon recipe inspired by the memory of Greenwhich’s short lived mango pizza. Noone I’ve talked to remembers it at all! I’ve been nostalgic for that taste since forever, never finding anything quite like it. If you remember it please leave a comment below, I need to know I wasn’t just imagining it.
Ingredients:
Pizza dough – store bought or your own homemade pizza dough. (substitute with sliced bread or naan for the quick modified lunch box version) Tomato sauce Bacon Brie cheese Mangoes Onions Grape Tomatoes Alfalfa sprouts Basil
Procedure:
- Spread the tomato sauce on the pizza dough
- Place bacon and cheese first topped with the onions
- Top cubed mangoes last.
- Bake the pizza dough for 8-10 minutes at 400 temperature
- Save fresh ingredients such as basil, alfalfa sprouts and grape tomatoes for later.
I made two different types of pizza, one topped with basil and tomatoes and the other topped with alfalfa sprouts and garlic flowers. The base is really just tomato sauce, bacon, ripe mangoes and onions, once you have that you can add whatever topping you like. It can be topped fancy for when you have small parties or you can make the quick and easy version. Whenever I have work the next day and can’t make my pizza crust from scratch, I just throw in toasted bread as base and go crazy with my toppings. Enjoy!
